Nothing Says Merry Xmas like No Bake Cookies and Sopapilla Cheesecake!

Ok.. so maybe these 2 desserts aren't super traditional in the holiday sense, but they are favorites around here and fairly simple to make! Both are extremely SWEET!

I made both last night in about an hour. I actually doubled the No Bake recipe, so that I would have plenty to take today to our Christmas party (we start munching on them before they even cool normally...)
Anyway, I thought I would repost the recipes for these.. since they are usually hidden among my shopping deals in other posts..

No Bake Cookies

Group #1 Ingredients:
3T Cocoa
3C Sugar
1/2 C Milk
1/2 C Butter

#2 Ingredients:
3C Oatmeal (1 minute oats)

Mix set #1 ingredients in a sauce pan, boil for 1 minute.
Then take off the heat and quickly stir in the set #2 ingredients. Drop on waxed paper by tsp. Let cool and enjoy!!

Sopapilla Cheesecake (credit to 4hats!!!)

2 cans crescent rolls
Two 8-ounce packages cream cheese, at room temperature - Its hard to beat when its cold!
1 cup sugar
1 tsp. vanilla
1/2 stick butter
1-1/2 tsp. cinnamon
1/4 cup sugar
Preheat oven to 350. Spray 9×13 pan with nonstick cooking spray.
Place 1 package crescent rolls in sprayed pan.
Beat cream cheese, sugar (1 cup) and vanilla till fluffy.
Spread over crescent rolls.
Place second package crescent rolls over cream cheese mixture.
Melt 1/2 stick of butter and pour over crescent rolls.
Mix 1-1/2 tsp cinnamon and 1/4 cup sugar and sprinkle on top. - I maybe use a bit more for coverage! :-)
Bake at 350 for 30 minutes or until golden brown. - 30 minutes does it for our oven!

Now 4hats... says you can top this with fruit or ice cream, served warm... but we actually have found we like it best cold. So I make it the day before and stick in the fridge... very yummy and we don't add anything on top.. its already sweet and yummy enough!!!
